Food talk- creamy chicken with cauliflower rice and balsamic tomatoes!
This low carb recipe is full of flavor and one of my favorites!

Here's how to do it:
- Season 1/2 inch thick chicken breasts (poud larger breasts if needed) with tyme, oregano, garlic, onion, salt and pepper
- Cook in oil for about 5 minutes each side
- Remove chicken from the pan
- In same pan, add mushrooms and cook for 10 minutes (until water is evaporated), then add onions, garlic and more seasoning. Let cook for a couple minutes
- Add 1 cup of chicken broth, 6 ounces of cream cheese, and half cup of heavy whipping cream
- Let sauce reduce and thicken
- Cook cauliflower rice over medium heat for 7-9 minutes, add salt, pepper
- Cook bacon in oven or on stove top... once crispy, cut up in small pieces
- Cut up about half cup of scallions
- Put cherry tomatoes in bowl with 1 tsp of olive oil and 2 tbsp of balsamic glaze
- Plate your chicken and cauliflower rice, add sauce over top and garnish with bacon and scallions, add balsamic tomatoes to plate.
- Enjoy!!
